The name 名前の由来

Hiritsu means ratio.

Hiritsu (比率) is the Japanese word for ratio, and it is the first thing we weigh every morning — grams of coffee against grams of water, heat against time, sweetness against acidity. A good cup is never an accident. It is a proportion, kept patiently, cup after cup.

But the ratio we care about most is not written on a recipe card. It is the one between your work and your life. If Monday to Friday belongs to your desk, take ninety minutes of it back. Sit with us, drink something warm and slow, and let the week find its balance again. If you leave a little more even than you arrived, our purpose is fulfilled.

A Japanese name, kept in the shokunin way.

We reached for Japanese for a second reason: shokunin — the craftsman who repeats an ordinary task with extraordinary care, not for applause, but because the work deserves it. It is the spirit we ask of everyone who wears a Hiritsu apron. Hands on the scale, eyes on the pour, pride in details most people will never notice. That is the standard the name holds us to.
